8 Cornish Hens
12 Cloves Garlic, minced
4 Tbsp. Oregano
Salt & Pepper
1 Cup Red Wine Vinegar
1-1/2 Cups Olive Oil
1 Cup Pitted Prunes
1 Cup Dried Apricots
1 Cup Green Olives
1/2 Cup Capers with juice
8 Bay Leaves
1 Cup Brown Sugar
1 Cup Dry White Wine
Mix all ingredients except hens. Marinate hens in mixture overnight
in refrigerator. Bake in marinade at 350° in uncovered
shallow pan for 1 to 1-1/2 hours. Serve with hot fruit.
