Blueberry Bread
Try this with a good cup of coffee on Christmas morning. You’ll get a great start on the big day—
and you’ll probably be back for seconds.


1 cup fresh (or thawed frozen) blueberries
1½ cups all-purpose flour
1 tablespoon flour
½ cup granulated sugar
⅔ cup milk
1 egg
1 heaping teaspoon baking powder

1. Preheat oven to 375°F. Grease and flour a 9” × 5” loaf pan.
2. Sift the dry ingredients together (leaving aside 1 tablespoon flour).
3. In a separate bowl, stir together the egg and milk.
4. Make a well in the center of the dry ingredients. Add milk mixture to the well all at once,
tossing with a fork until just moistened.
5. Toss blueberries in 1 tablespoon flour. Add blueberries to batter.
6. Spoon batter into prepared pan.
7. Bake until a toothpick inserted into the center comes out clean, approximately 30 minutes.
8. Transfer to wire rack; let cool.
