Dinah’s Humdinger Spinach Casserole

1 10–ounce package frozen spinach, thawed, drained, chopped 1/2 cup plain yogurt
2 tbsp. onion, minced
1 egg
2 cups Monterey Jack cheese, shredded
1/4 cup milk
1/4 cup Parmesan cheese, grated
4 ounces spaghetti, cooked
salt and fresh ground pepper to taste

Mix egg, milk, onion, half the Parmesan, yogurt, salt and pepper. Stir in cheese, spinach and spaghetti. Spoon into small ovenproof casserole dish or four individual ramekins. Sprinkle with remaining Parmesan. Bake at 350F for 30 minutes.
