Poor Man's Rice Pudding
MAKES 6 SERVINGS

In Colonial days, sugar was more expensive and less available
than molasses, so molasses was considered a "poor man's" sweetener.
Molasses adds delicious flavor and amber color to this pudding.

1A cup rice
4 cups milk
l/2 teaspoon salt
1A cup molasses
l/2 teaspoon cinnamon
1/2 cup raisins
1 tablespoon butter

Preheat oven to 300°F. Butter a 2-quart casserole or ovenproof
pudding bowl.
Combine rice, milk, salt, molasses, and cinnamon. Pour into prepared
casserole or pudding bowl. Bake, uncovered, for 3 hours. Stir
three times with a fork during the first hour of baking, so that the rice
will not settle. After the first hour, stir in the raisins and the butter.
Serve warm.
