Icebox Pumpkin Cream Roll

It must have been a wonderland—all the new and interesting
produce that the Indians had to offer the settlers in the New World.
Pumpkin was called "pompion" by the English settlers, and was new
to Europeans. The Indians had made up many imaginative ways to use
the produce from their fields. Pumpkin Pie (see recipe) lingers as the
most famous American classic. But European cooks quickly adapted
pumpkin, corn, and squashes to many other interesting desserts, and
main dishes as well. This pumpkin roll includes cooked pureed pumpkin,
spices, and lots of eggs to make a spicy cake that can be rolled
up with a filling that has pumpkin in it, too.

6 eggs, separated
1/2 cup granulated sugar
1/2 cup cooked pureed pumpkin
1 teaspoon mixed pumpkin pie spice
1A cup all-purpose flour
l/2 teaspoon baking powder
1/4 teaspoon salt
1 cup heavy cream
1A cup powdered sugar
l/2 cup cooked pureed pumpkin
1/2 teaspoon mixed pumpkin pie spice
1 cup chopped toasted pecans
1 teaspoon vanilla

Preheat oven to 350°F. Line a lO 1/2-by-l5 1/2-inch jelly-roll pan
with parchment or wax paper, and grease the paper well.
To prepare the pumpkin roll, beat the egg yolks and granulated
sugar until light and thick. Blend in l/2 cup pumpkin puree, 1 teaspoon
pumpkin spice, flour, and baking powder. Beat egg whites with
salt, until firm peaks form. Fold whites into yolk mixture. Pour batter
into the prepared pan. Bake 1 5 minutes, until cake bounces back when
touched in the center. Turn out onto wax paper that has been sprinkled
with powdered sugar. Immediately peel off top paper and carefully
roll up cake, making the roll lengthwise. Cool.
Meanwhile prepare filling. Whip the cream until stiff, beating in
1A cup powdered sugar. Blend in l/2 cup pumpkin puree, 1/2 teaspoon
pumpkin spice, pecans, and vanilla. Unroll cooled cake. Spread with
the filling, and roll it up again. Chill 2 to 4 hours. When ready to
serve, sprinkle with additional powdered sugar.
