PostSubject: Japanese ~ Steak Hibachi ~ Chef Morimoto   Japanese ~ Steak Hibachi ~ Chef Morimoto EmptyJanuary 28th 2011, 2:49 am

Ingredients

2 filet mignon steaks, about 12 ounces each
2 1/2 tablespoons soy sauce
1 can bean sprouts, or 8 ounces fresh
3 tablespoons butter
2 tablespoons lemon juice
Sugar
Black pepper
4 ounces mandarin oranges (canned)
4 tablespoons oil

How to make Steak Japanese
Sprinkle 2 tablespoons of the soy sauce over steaks.
Rub in; let steaks marinate for 1 hour.
Meanwhile, drain bean sprouts; or, if using fresh bean sprouts, blanch them, rinse with cold water, then drain.
Heat 2 tablespoons of the butter in a saucepan.
Add bean sprouts; season with lemon juice, sugar, pepper, and 1/2 tablespoon soy sauce.
Simmer for 5 minutes, then keep them warm.
In another small saucepan heat remaining 1 tablespoon butter, add drained mandarin oranges, and heat through, about 2 minutes.
Keep them warm.
In heavy skillet heat oil over high heat until a light haze forms above it.
Add steaks; quickly brown them on each side for about 1/2 minute.
Lower heat; continue cooking steaks for about 10 minutes on each side.
Arrange steaks on preheated platter.
Garnish with bean sprouts and mandarin oranges.
Serve immediately.
