Glazed Lamb Chops
The chops need to be marinated for several hours but they
only take a few minutes to cook.
Serves 4
Ingredients
1 tbsp oil
4 thick lamb chops
2 wine glasses of sherry
1 tbsp mint sauce
2 tsp dark brown sugar
Salt
Pepper
Place the lamb chops in a bowl and mix all the ingredients
together. Leave the chops in the marinade for at least 6
hours in the fridge.
To cook the chops, take them out of the marinade.
Heat the oil in a frying pan and fry the chops for a few
minutes on each side. They should be served still pink
in the middle.
When they are cooked, remove from the pan, pour
in the remaining marinade and reduce by bringing to
the boil. Pour the sauce over the chops and serve with
fresh vegetables.
