Chicken with Mushrooms and Peppers
Serves 4
Ingredients
2 tbsp vegetable oil
4 chicken pieces (breast, leg or thigh)
1 green pepper, deseeded and sliced into rings
4 oz (100 g) mushrooms, washed and sliced
1 pint (600 ml) chicken stock

1 onion, peeled and chopped
Salt
Pepper
Heat the oil in a medium-sized saucepan, then fry the
onions and chicken for about 5 minutes. Stir in the
mushrooms, peppers and seasoning and continue to fry
gently for another 10 minutes. Pour the chicken stock
over the top and simmer for 30 minutes. Serve with
potatoes or rice.
