Cabbage Parcels
Serves 2
Ingredients
6 large cabbage leaves
8 oz (225 g) spinach
6 oz (150 g) cooked rice
2 oz (50 g) butter
4 oz (100 g) grated cheddar cheese

1 egg yolk
½ pint (300 ml) vegetable stock


First, simmer the spinach in a little water for 5 minutes,
then drain and put aside. Simmer the cabbage leaves for
about two minutes and remove from the water.
Melt the butter and add the chopped onion together
with the rice, spinach, cheese, and seasoning. Bind with
the egg yolk.
When thoroughly mixed, put a heaped spoonful of
it onto each of the cabbage leaves, and wrap into parcels.
Place the parcels in an ovenproof dish and pour the stock
on top.
Cover with foil and bake for 30 minutes at Gas Mark 4
(180 °C, 350 °F).
