Pears in Red Wine
Serves 4
4 pears
4 oz (100 g) sugar
¼ pint (150 ml) red wine
¼ pint (150 ml) water
Pinch of cinnamon
1 oz (25 g) browned almond flakes

Put the wine, water, sugar and cinnamon in a large
saucepan and heat gently until the sugar has dissolved.
Peel the pears, trying not to damage the fruit, and leave
the stalks on. Place the pears in the wine and simmer
for about 20 minutes or until they are soft. When the
pears are cooked remove from the pan and place in a
serving dish. Reduce the wine sauce by boiling rapidly.
It should become syrupy. Pour the wine over the pears
and when cool, chill in the fridge. Before serving sprinkle
with almonds and serve with cream.
