Raspberry Brulée
Serves 4
Ingredients
8 oz (225 g) fresh raspberries
½ pint (300 ml) double cream or whipping cream

6 oz (150 g) demerara or golden granulated sugar
Place the raspberries in a shallow heatproof dish. Whip
the cream until thick (but not too stiff) and spread over
the raspberries. Sprinkle the sugar over the cream,
covering it completely.
Pre-heat the grill and then place the brulée under
the grill until it is dark and bubbling. Remove from the
grill and cool. Chill in the fridge for a couple of hours.
A cheaper version could be made using sliced banana.
