Oven Roasted Sea Bass with Ginger and Lime Sauce
<Makes 2 servings - can be doubled>
2 tbls. Fresh lime juice
1 1/2 teaspoons soy sauce
1 tbl. Chopped fresh cilantro
1 tbl. Chopped peeled fresh ginger
1 tbl. Minced shallot
5 teaspoons olive oil
2 six ounce sea bass filets (about 3/4 inch thick)
Preheat oven to 500, mix first 5 ingredients and 3 teaspoons of oil in a small bowl. Season sauce with salt and pepper. Brush glass baking dish with the rest of the oil, sprinkle fish with salt and pepper, spoon 1/2 tbl. Sauce over each filet. Roast fish until just opaque in the center, about 12 minutes. Top fish with remaining sauce and serve.
