Fresh Tomato soup
Ingredients:
4 Tablespoons Butter
5 06 6 large ripe Tomatoes
1 Clove Garlic, crushed
2 heaping teaspoons flour
2 Cups (or more) of milk
Melt Butter in a soup pot. Rince tomatoes and cut into pieces. Discard the seeds with out squeezing and losing juice. Put tomatoes in the pot and simmer gently as you add garlic and flour,then gradually add enuf milk to make a cream soup of medium thickness. Cut in the herbs that are abundant in late summer-basil , parsley,chervil , chives are some ..Serve with the tomatoes still big in size and has that fresh garden taste. Good hot or cold.
