Curried Couscous

1½ cups chicken broth 360 ml
½ cup golden raisins 120 ml
1 teaspoon curry powder 5 ml
1 cup uncooked couscous 240 ml
1⁄3 cup oil 80 ml
2 tablespoons lemon juice 30 ml
1 teaspoon sugar 5 ml
½ cup slivered almonds, toasted 120 ml
2 fresh green onions, sliced

• In saucepan, combine chicken broth, raisins, curry
powder and ½ teaspoon (2 ml) salt and bring to a
boil.
• Remove from heat and stir in couscous. Cover
and let stand 5 minutes. Fluff with fork and cook,
uncovered.
• Combine oil, lemon juice, sugar and almonds and
toss with couscous.
• Sprinkle green onion over top and serve.
