Aunt Ivy’s Three Fruit Cobbler

8 cups mixed fruit, peaches, plums, apricots, chopped
1/2 cup sugar
1 1/2 tsp. all purpose flour
zest of 1 orange
1 tsp. cinnamon

Preheat oven to 400F, and lightly grease 12 inch square glass baking dish. Cut fruit into chunks, mix with sugar, flour, cinnamon and zest. Spoon into baking
dish.

Topping:
1 1/2 cups all purpose flour 1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup sugar
6 tbsp. cold butter
2 eggs
1 cup buttermilk
1 tsp. vanilla extract
2 drops almond extract
1/4 cup blanched almonds, sliced

Sift dry ingredients together. Cut in butter with pastry cutter, two knives or your fingertips until coarse lumps are formed. Blend in eggs, buttermilk, vanilla and almond extracts. Spoon over fruit and spread evenly. Sprinkle with almonds. Bake for 30 minutes or until golden brown and firm to the touch. Cool on wire rack. Serve warm or chilled.
