Zydeco Turkey

1 lb. cooked turkey, cut in bite size pieces
4 strips bacon
1 medium onion, chopped coarsely
1 clove garlic, minced
2 stalks celery, chopped
5 tomatoes, chopped coarsely
1 cup mushrooms, quartered
1 green pepper, chopped coarsely
2 tbsp. fresh parsley, chopped
1/4 cup white wine
1/2 tsp. dried thyme
1 bay leaf
1/2 tsp. sugar
pinch cayenne to taste
1 1/2 tbsp. cornstarch

Fry bacon in saucepan until crisp. Remove, drain on paper towels, chop coarsely and set aside. Saute onion, garlic and celery in bacon drippings. Add tomatoes, mushrooms, green pepper, parsley, wine, thyme, bay leaf, sugar, cayenne and salt. Bring to boil. Simmer 15 minutes. Stir in turkey and bacon and bring to boil. Remove bay leaf. Reduce heat.
Combine cornstarch will just enough cool water to make thin paste. Stir
cornstarch into turkey mixture. Simmer for 2 minutes or until thickened. Serve over rice.
