Opa Okra!
2 cups ripe tomatoes, blanched and peeled
1 lb. okra
2 medium onions, chopped fine
3 tbsp. olive oil
1/4 cup fresh parsley, chopped
1/4 tsp. sugar
juice of 1 lemon
1/2 cup red wine
salt and fresh ground pepper to taste
Wash and dry okra. Cut off stems, not exposing seeds. Heat oil in pan. Add onion and garlic, saute until lightly brown and fragrant. Stir in okra, tomatoes, parsley, sugar, lemon juice, wine, salt and pepper. Bring to a boil, cover and simmer on low for 30 minutes or until tender. Transfer to serving dish
