Pesto Potatoes Please
2 lbs. potatoes, peeled, halved, steamed until cooked Pesto
1 cup fresh basil leaves, chopped
4 cloves garlic, chopped
1/3 cup Parmesan cheese, grated
1/4 cup pine nuts, toasted
1/3 cup olive oil
1 tsp. fresh ground pepper
1 tsp. salt
Place all ingredients in blender and puree. Mash potatoes by hand (like the lumpy bits, it seems more home-made that way) with pesto sauce and serve.
