Cranberry Bread
A wholesome and delicious holiday treat—and easy to make, too!

2 cups all-purpose flour
1 cup granulated sugar
1½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
1 cup fresh or frozen cranberries, chopped into halves
¼ cup shortening
½ cup orange juice
1 teaspoon grated orange peel
1 large egg, lightly beaten
½ cup chopped walnuts (optional)

1. Preheat oven to 350°F. Grease a 9” × 5” loaf pan.
2. Sift together flour, sugar, baking powder, baking soda, and salt.
3. Using a pastry blender or 2 knives held together, cut in shortening until coarse crumbs form.
4. In a separate bowl, combine orange juice, orange peel, and eggs.
5. Make a well in the center of the dry ingredients. Add egg mixture all at once, tossing with a
fork until just moistened.
6. Stir in the nuts and cranberries. Spread batter in prepared pan. Bake until a toothpick inserted
in the center comes out clean, approximately 1 hour.
7. Remove bread from pan; cool completely.
