Vanilla Rice Cream
MAKES 6 SERVINGS
To fancy up an old-fashioned rice pudding, gelatin and whipped
cream are added to this classic. It is a wholesome family dessert and
a perfect base for fresh berries in season. It is often served with ice
cream toppings such as caramel, butterscotch, or chocolate syrup and
chopped nuts.
3 cups milk
3 tablespoons short-grain rice
1 package (I tablespoon) unflavored gelatin
3 tablespoons cold water
1 tablespoon sugar
1 teaspoon vanilla
1 cup heavy cream, whipped
In a heavy saucepan, combine 2 cups milk and rice. Place over
low heat and cook until the rice is tender, about 30 minutes. Mix the
gelatin with the cold water and let soften a few minutes. In a bowl,
combine the gelatin mixture, sugar, and 1 cup milk. Mix into the
hot-milk-and-rice mixture. Cool. Add the vanilla, and then fold in the
whipped cream. Spoon into dessert dishes and chill.
PINEAPPLE RICE CREAM: Before chilling, add 1 cup thoroughly
drained canned crushed pineapple to the rice cream.
