Ingredients

1/4 c Coconut Oil
2 c Gluten Free Bisquick
3 c Almond Milk (Original, unsweetned)
8 eggs
1 c Daiya Mozzerella Cheese
11 oz cuped curred ham
1 Package (2.2 oz) preccoked bacon, chopped
2 c Daiya Cheddar Cheese
1/4 teaspoon salt
1 teaspoon spicy mustard
1 dash nutmeg

Directions

1 Heat oven to 375f. Spray 3-quart glass baking dish with cooking spray. Place coconut oil in dish; place in oven until melted (about 10 min).

2 In medium bowl, mix gf bisquick, 2 cups of the milk and 2 of the eggs with whisk until tiny lumps remain. Pour over butter in baking dish. Layer mozzerellas, 1 c cheddar, ham, and bacon over batter. In large bowl, whisk together remaining 1 c milk, 6 eggs, salt, mustard and nutmeg.

3. Bake uncovered for 30 min.

4. Add remaining 1c Daiya cheese to top of dish, bake an additional 5-10 min or until golden brown/cheese is melted.

Makes 8 servings
