Vlaai is a pie made of yeasted pastry and filling. Traditionally found in Limburg a province in the south part of the Netherlands.

rijstevlaai - 8x8 round tin
dough
125 g flour
1 tsp yeast
25 g sugar
50 ml lukewarm milk
25 g melted butter
1 egg
pinch of salt



In a large bowl dissolve yeast in milk. Allow mixture to sit 10 minutes, or until bubbly. Add the remaining ingredients then mix everything together until you have smooth dough. Put in a warm spot and leave to rise for about an hour. Meanwhile prepare your rice pudding. When your dough has risen, knead briefly and roll it out on a floured surface. Line your pie plate and cut off most of the excess dough.
rice pudding
50 g short grain rice
3 - 3 1/2 cups of milk
60 g sugar
1 tsp vanilla
10 g melted butter
pinch of cinnamon
1 egg, separated

Soak rice in warm water for 30 minutes then drain and put into stewpan. Add 3 cups of milk, vanilla, cinnamon bring to a boil, then turn down the heat and cook on lowest heat until tender. When rice is about to cook add the sugar and butter, mix well. Remove from heat and let cool. Once cooled stir the egg yolk in the rice mixture. If the rice become very stiff add more milk. Beat egg white until stiff and gently fold into the rice mixture. Pour this into the lined tin. Bake at 350f or 180 C for about 20-25 minutes. The pastry should be brown and the fillng set, but still slightly wobbly. It will firm up once cooled. Serve with whipped cream and shave chocolate.


Let yourpie/ vlaai cool 1st before slicing...mine? oh well I was so excited as usual..see the filling isn't firm yet.
