Ingredients:
1 pound ground beef, browned and drained
2 containers (12-oz. size) containers low-fat cottage cheese
8 ounces shredded mozzarella cheese (save half for top)
1 egg
1/4 cup mayonnaise
1 teaspoon oregano
18 large shells or manicotti, cooked until just tender and cooled
1 jar (32-oz. size) spaghetti sauce
Directions:
Preheat oven to 375ºF.
In a large bowl, stir together the cooked beef, cottage cheese, half the mozzarella, egg, mayonnaise and oregano. Spread about 1 cup of the spaghetti sauce over the entire bottom of a large shallow baking dish.
Fill each shell or manicotti with the cheese filling, placing each one in the sauce-lined dish (place shells seam-side down).
When all shells are filled and in the pan, spread the remaining sauce over all and top with remaining cheese. Bake for 25-30 minutes, until hot and bubbly.
