Power Cookie Recipe (makes 16 large cookies)
Ingredients:
* Mix wet ingredients in a large bowl
* Cream together:
* ½ cup brown sugar
* ¼ cup honey (or agave nectar)
* ¼ cup butter, softened
* 1 teaspoon vanilla extract
Add:
* 1 egg, slightly beaten
* ½ cup unsweetened applesauce
Mix dry ingredients in a separate bowl
* 1-½ cups flour (for added protein replace a 1/2 cup flour with a plant based protein powder). Unbleached all-purpose flour will do, however, you can pump up the nutritional value by using spelt flour or another flour of choice such as Nutriflour or add half whole wheat flour. Juice PLUS Complete Vanilla is also a great choice as it has fruit and vegetable powders in it and tastes great
* ½ teaspoon baking soda
* ¼ teaspoon salt
* 1 teaspoon cinnamon
* Create granola mix in another bowl
* 2 cups granola mix (you can replace up to 1 cup with added chopped almonds, sunflower, flax, pumpkin seeds, flaked unsweetened coconut depending on your taste choices and what your granola may have)
* 1/3 cup dried fruit of choice (cranberries, currants, raisins, chopped apricots or, chocolate chips)
Preheat your oven to 375 degrees then:
* Blend the dry ingredients into the wet ingredients just until blended. Then add granola mix just until blended. Do not over mix or they will be dry.
* Spray two cookie sheets with cooking spray or use parchment paper.
* Drop heaping tablespoon-sized portions of batter onto the cookie sheet and space about 2 inches apart. Shape them so they are about a ½” thick and 2” wide. They will spread to 3” so space them out.
* Bake for 15 minutes until they spring back in the middle. Do not over bake or they will be dry and crumbly.
* Cool 3 minutes, then remove from the cookie sheet to a cooling rack. For storage, put parchment paper between the layers to keep from sticking and easy removal of one or two at a time.
