Spicy Sausage Casserole
This recipe is perfect for a cold winter’s evening. Wash it
down with a robust wine with plenty of kick.


Ingredients
1 pack of pork sausages, cut into pieces
1 onion, peeled and chopped
2 cloves of garlic, peeled and finely chopped
1 tin of tomatoes
2 tbsp tomato purée
1 green pepper, deseeded and chopped
1 glass of red wine
2 tsp chilli powder

1 tsp oregano
2 tbsp oil
Pepper
Salt


Heat the oil in a largish saucepan or wok, then fry the
onions, garlic and chilli powder for about 5 minutes.
Add the sausages and the pepper, and cook for about 10
minutes. Add the tomato purée, wine, seasoning,
tomatoes and oregano. Simmer for at least 15 minutes
then serve with rice and peas. Alternatively, after cooking
the rice and peas add them directly to the casserole and
cook for another couple of minutes. Also tastes nice with
grated cheese on top.
