Chicken Casserole
Serves 4
Ingredients
4 pieces of chicken (breast, wings or thigh)
½ pint (300 ml) chicken stock
1 tbsp tomato purée
1 onion, peeled and chopped
2 tsp flour
2 tsp oregano or mixed herbs

Pepper
Mix the flour with a little water and then combine with
the chicken stock. Add the herbs, onion, tomato purée,
salt and pepper. Put the chicken in an ovenproof dish,
and pour the stock over it. Cover the dish with foil and
bake in the oven for about 1 hour on Gas Mark 4 (180
°C, 350 °F). Serve with potatoes and vegetables.
