Spicy Chicken
Serves 4
Ingredients
2 tbsp oil
4 chicken portions, skinned
1 clove of garlic, peeled and finely chopped
2 large onions, peeled and chopped
1 tbsp paprika
¼ pint (150 ml) chicken stock
¼ pint (150 ml) soured cream
Salt
Pepper
Heat the oil in a casserole dish and fry the onions and
garlic slowly for about 5 minutes. They should end up
golden in colour. When cooking onions don’t have the
heat up too high as the onions can burn in a matter of
seconds. When the onions are cooked add the chicken
and paprika and continue to fry for a few minutes.
Season, mix in the stock and simmer for 30 minutes.
Just before serving stir in the soured cream. Serve
with rice or potatoes.
