Chicken Curry with Cucumber Raita
Ingredients
2 tbsp oil
4 chicken pieces

2 onions, peeled and chopped
2 cloves of garlic, peeled and finely chopped
3 tsp curry powder
1 tsp garam masala
2 fresh green chilli peppers, chopped into rings
1 tin of tomatoes
3 whole green cardamom pods
2 tbsp freshly chopped coriander
1 small pot of natural yogurt
1 to 2 tbsp water
Salt
Pepper
For the Cucumber Raita:
½ cucumber, peeled and chopped into pieces
1 small pot of natural yogurt
1 tbsp olive oil
1 tbsp freshly chopped mint
Pepper
Salt
To make the chicken curry, heat the oil in a large
saucepan, then fry the onion and garlic gently for 5
minutes or until they have softened. Add the curry

powder, garam masala and chillies, and fry for a couple
more minutes. Add the chicken and water and fry for 5
minutes. After this the other ingredients can be added,
apart from the yogurt, which is added 5 minutes before
serving. Season to taste. Simmer for 30 to 40 minutes,
then serve with rice.
To make the raita, mix the cucumber, yogurt and mint
together in a bowl, pour the oil on top, and season.
