Fish Cakes
Serves 4
Ingredients
8 oz (225 g) cooked cod
8 oz (225 g) mashed potato
1 oz (25 g) melted butter
1 egg, beaten
FISH
Dried breadcrumbs
1 tbsp chopped parsley
1 tsp capers
Salt
Pepper
Remove the skin and bones from the fish and flake. Mix
the fish, potato, parsley, capers, butter, salt and pepper
together. Shape into 6 to 8 cakes by hand. Dip the fish
cakes into the egg mixture, then roll in the breadcrumbs.
Shallow fry in hot fat until they are golden-brown on
both sides.
