Fresh Herb Soda Bread
2 cups whole wheat flour
2 cups all purpose flour
2 cups buttermilk
2 tsp. sugar
1 tsp. baking soda
1 tsp. baking powder
1 tbsp. salt
3 tbsp. butter
1/2 tsp. sage
1/2 tsp. basil
1/2 tsp. thyme
1/2 tsp. chives
1/2 tsp. marjoram
Lightly grease a baking sheet.
Sift dry ingredients together in a large bowl. Cut in butter until mixture forms crumbles. Stir in herbs. Stir in buttermilk and form the dough into a ball. Knead dough lightly on floured surface until smooth.
Preheat oven to 375F. Transfer dough to baking sheet and form a rough loaf. Bake 40 minutes or until loaf sounds hollow when tapped. Cool on wire rack and serve warm.
