Baked Bananas
I have no doubt that if you have not tried this recipe, after
tasting it you will be smitten. Make sure that you use dark
chocolate as milk chocolate is just not the same.

Serves 4
Ingredients

4 large bananas
4 oz (100 g) dark chocolate

Pre-heat the oven to Gas Mark 6 (225 °C, 425 °F). Take
a sharp knife and make an incision through the skin of
the banana from end to end. Gently peel the skin apart
and make another incision the length of the banana. Be
careful not to pierce the other side of the skin. Break the
chocolate into small pieces and then insert the chocolate
in the cavity. Close the edges of the banana skin together,
then wrap in tinfoil. Place the bananas in the oven for
about 20 minutes or until they have softened and the
chocolate has melted. Serve with thick double cream.
These can also be cooked in the embers of a barbeque,
where they will only take about 10 minutes.
