a simple squash casserole
3 lbs squash
1/2 cup chopped onion
1 stick of butter, divided (yes, butter gulp)
2 eggs
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon nutmeg
1 1/2 cup cracker crumbs, divided
Cook squash and onion together until tender. Drain well. Mix squash, eggs, 1/2 of the cracker crumbs, salt, pepper, and nutmeg together. Add 1/2 of the butter. Pour into 8x10 pan. Pour the rest of the butter on top (gulp) and sprinkle with remaining cracker crumbs. Bake at 350 degrees F for 1 to 1 1/4 hours until browned.
