Pineapple-Cheese Casserole
This is really a wonderful and different combination of flavors. It is
great served at brunch or great served with a sandwich at lunch.
1 (20 ounce) can pineapple chunks, drained 567 g
1 cup sugar 240 ml
5 tablespoons flour 75 ml
1½ cups shredded cheddar cheese 360 ml
1 stack round, buttery crackers, crushed
½ cup (1 stick) butter, melted 120 ml
• Butter 9 x 13-inch (23 x 33 cm) baking dish and layer
in following order: pineapple, sugar-flour mixture,
shredded cheese and cracker crumbs.
• Drizzle melted butter over casserole.
• Bake uncovered at 350° (176° C) for 25 minutes or
until bubbly.
