Shrimp Casserole
1 pkg long grain wild rice, (6 ounce)
1 c black olives, sliced
1 c artichoke hearts, quartered (un-marinaded)
1/2 c green pepper, diced
1 large whole tomatoes, wedged and –un-drained
6 oz feta cheese, crumbled
1 lb shrimp, cooked and peeled
1 tsp oregano
salt and pepper, to taste
Cook rice according to package directions. In a large bowl, mix in all remaining ingredients. Spoon into a lightly greased two-quart casserole dish. Never hesitate to add a bit more of your favorite ingredients. Cover and bake at 350°F for 25 to 30 minutes. Serve with a salad and French bread.
