Creole Tomato Bruschetta
4 ripe Creole or heirloom tomatoes, seeded and diced*
1 teaspoon chopped garlic
1 tablespoon chopped parsley
1/4 cup basil, chiffonade
1tablespoon honey
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
1 to 2 teaspoons kosher salt
Freshly ground black pepper to taste
Combine all ingredients in a large bowl and mix thoroughly. Serve with toast
points or your favorite crackers.
Serves 6
* Any ripe tomato may be substituted.
