Banana Boats Filled with Sliced Mixed Fruit
4 medium Ripe bananas
1 c drained Mandarin oranges canned in light syrup, drained
1 c Hulled and sliced fresh ripe strawberries
1/4 c Orange juice
2 medium Kiwis, peeled and sliced

If you aren’t a believer of the claim “we eat with our eyes,” watch diners’
reactions when this simple mixture of sliced fruit is presented in a banana
shell. It offers an impressive dessert and at the same time, it is easy to
make.



With a small pointed knife, cut a strip of peel about 1 inch wide from each
banana. Begin cutting strip at inside tip of each banana and continue cutting
strip until about 1/2inch from stem, leaving strip and stem attached.
Remove banana from peel. Roll strip of peel over stem and secure with a
wooden or plastic pick. Top pick with mandarin orange and strawberry
slice.
Slice bananas obliquely or on a diagonal. Place in a large bowl. Pour
orange juice over bananas to prevent browning. Add remaining fruit and
mix gently. Spoon fruit mixture attractively into banana shells. Serve immediately.
