Halibut Casserole
Serves 4
Ingredients
2 tbsp oil
4 halibut steaks
1 onion, peeled and chopped
½ pint (300 ml) white wine
FISH
1 garlic clove, peeled and crushed
1 tbsp cornflour
8 oz (225 g) tomatoes, skinned, deseeded and
chopped
1 tbsp tomato purée
Salt
Pepper
Heat the oil in a casserole dish. Add the onion and garlic
and fry gently for 3 to 4 minutes. Stir in the cornflour,
tomatoes, tomato purée and the wine. Bring slowly to
the boil, stirring constantly, then add the fish and simmer
for 10 minutes or until the fish is cooked. The perfect
accompaniment is mashed potato.
