Lentil Curry

Ingredients
2 tbsp oil
4 oz (100 g) lentils, soaked in cold water for 1 hour
½ pint (300 ml) vegetable stock
4 carrots, scraped and chopped
1 onion, peeled and chopped

1 courgette, sliced
1 leek, sliced
1 tbsp curry powder
2 fresh tomatoes, sliced
Salt
Pepper


Boil the lentils for about 7 minutes and then strain. Heat
the oil in a large saucepan, then fry the onions and curry
powder for 5 minutes. Add the other vegetables and fry
for another 5 minutes. Then pour in the stock and lentils,
bring to the boil, and simmer for an hour. Season.
